In Cosenza in Calabria, Southern Italy, they have come up with an ingenious way of preserving the juicy dottato figs which have tender skins, soft seeds and are unique to this region. The figs are picked from the tree well matured, dried and slowly cooked in their own juices. They are then shaped into balls and wrapped in green fig leaves and slow baked.
